Sweet Pulled Pork
Marinade:
2-3 lb. boneless pork roast
10 oz. coke-a-cola
1/4 cup brown sugar
1/4 cup water
dash of garlic powder
Put coke, water, brown sugar and garlic salt into crock pot with roast. Cook on high for 3-4 hours. Drain out any liquid left in pot then shred pork.
Sauce:
10 oz. coke
7 oz. can green chilies sliced
1 1/4 cup brown sugar
10 oz. can Old el Paso medium enchilada sauce
In blender blend coke, chilies, enchilada sauce and brown sugar and add to shredded pork. Cook in crock pot on low for 2 more hours. This is similar to Cafe Rio's pork so it's best served the way they do!
Label: Sweet Pulled Pork
Set aside separate sauce packet for later. Cook roast on high 3-4 hours. Drain off excess liquid in pot. Shred pork. Blend the set aside sauce in blender and add to shredded roast. Cook on low for additional 2 hours. This is similiar to Cafe Rio's pork so it's best served the way they do! 3/23/10
