Cilantro Lime Chicken with Corn and Black Beans

3-4 chicken breasts
2 Tbsp olive oil
1 lime, juiced
1 bunch cilantro
1-16 oz bag of frozen corn
2 minced garlic cloves
1/2 finely chopped onion
1 can black beans, drained and rinsed
1 tsp cumin or chipotle powder
salt and pepper to taste

Place all ingredients into a ziploc bag and freeze.

Labels (24): Place 3-4 chicken breasts and ingredients in crockpot. Cook on low for 8 hours or high for 4 hours. 2/26/15

Melt in your mouth Pot Roast

1 (3- to 4-pound) beef chuck roast
1 (12-ounce) can Cola (not diet)
3⁄4 cup dark brown sugar
3⁄4 cup Heinz chili sauce
3⁄4 cup ketchup
3⁄4 packet dry onion soup mix

Label: (12) Melt in Your Mouth Pot Roast
Combine all ingredients in a slow cooker, including the can of Coke. Cook on low 8 to 10 hours.
*Optional...Add 4 or 5 red potatoes and 2 cups of baby carrots. 3-15

Grilled Kielbasa and Pesto Penne

Grilled Kielbasa and Pesto Penne

Ingredients:
  • 1 lb Penne Pasta
  • 1 lb cooked Kielbasa
  • 1/2 cup Pesto sauce
  • 1 tablespoon dried basil
  • Dash of dried Oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
Directions:
  1. Preheat the grill or griddle on medium heat.
  2. Cook the pasta according to the directions on the box. Be sure to season the boiling water with salt before adding in the pasta.
  3. Keep the Kielbasa whole if using an outdoor grill. Cut the Kielbasa into 1/2 inch slices if you're using a stovetop griddle. Grill the Kielbasa until slightly browned and marked with grill marks. 
  4. Return the drained pasta to the pot. Toss in the Kielbasa (if you keep the Kielbasa whole, be sure to cut it into slices before adding it to the pasta), Pesto sauce, dried basil, dried Oregano, and garlic powder. 
  5. Toss together the ingredients. 
  6. Season with salt and pepper to taste.
  7. Serve warm.
Label (24) Grilled Kielbasa & Pesto Penne  Cook pasta & grill or brown sausage.  Add sausage, pasta & bag of sauce toss & serve.   

Cafe Rio Sweet Pork


ingredients
  • 1 pork shoulder/butt -3 lbs
  • 1 old el paso sauce packet (roasted garlic
  • 1 cup root beer (a&w)
  • 2 cups light brown sugar
instructions
  1. place the pork in a slow cooker. mix the sauce, rootbeer and brown sugar in a bowl and pour all over the pork. cook on low for 6 hours, remove the meat and shred (it should be quite easy and tender). place the meat back in the sauce and cook on low for an additional 2 hours.
  2. serve immediately.
cilantro-lime rice
   ingredients
  • 2 cups rice
  • 4 cups water
  • 2 tablespoons of unsalted butter
  • 2 teaspoons chicken bouillon
  • 1 handful cilantro, chopped
  • 1/2 lime, juiced
  • 1 can (4oz) diced green chiles
  instructions
  1. pour everything in a rice cooker and follow product instructions, or in a pot, heat to a boil and then add the lid and turn down to low for 20-30 minutes or until tender.
  2. remove the lid, stir to combine everything and serve immediately.

Mix sauce, brown sugar, & 1 cup root beer. Pour on pork in slow cooker.  Cook low for 6 hrs. Shred & cook on low for 2 hrs.  Use for tacos, burritos, salads.
Rice: add contents of bag, green chilies and 4 cups of water to rice cooker (or cook in pot).

Sloppy Joes

Sloppy Joes

1 lb Hamburger
1 large onion
1/2 tsp salt

Brown and add the remaining ingredients and simmer 30 minutes.

1 1/2 Tbsp flour
1 1/2 tsp chili powder
1 1/2 Tbsp catsup
2 Tbsp Worchestershire sauce
1 can tomato soup
2 bay leaves

Label (12) Sloppy Joes  Thaw & brown meat.  Add sauce bag and simmer 30 mins.  Serve on Buns 1/15/15

Sweet, Sticky, & Spicy Chicken

SWEET, STICKY, AND SPICY CHICKEN

Ingredients:

1 tablespoon brown sugar
2 tablespoons honey
1/4 cup soy sauce
2 teaspoons chopped fresh ginger root
(or 1/2 tsp ground ginger)
2 teaspoons chopped garlic
2 tablespoons hot sauce
salt and pepper to taste
4 skinless, boneless chicken breast
halves - cut into 1/2 inch strips
(or 1&1/2-2lbs chicken strips)
1 tablespoon vegetable oil

Directions:

1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
2. Lightly salt and pepper the chicken strips.
3.
Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.   Great served over rice.

Baked Ziti



1 lb dried ziti
1 lb ground beef
1 T dried onion
1 jar Traditional Prego
1 jar Sausage Prego
6 oz. spliced provolone cheese
1 1/2 cups sour cream
8 oz mozzarella cheese
2 T grated parmesan cheese

Cook Ziti al dente. Brown meat with dried onion. Add sauce and simmer for 15 minutes. Layer half of Ziti in sprayed baking dish. Layer provolone cheese on pasta. Spread sour cream over provolone. Spread half of sauce. Add remaining Ziti. Add mozzarella and remaining sauce. Top with parmesan cheese. Bake for 30 minutes at 350.

Labels 12-  Baked Ziti- Thaw.  Bake covered for 30 minutes at 350.  Uncover for last 5 minutes.  1-15-15
