Crockpot Quesadillas
Ingredients:
6 boneless, skinless chicken Breasts frozen
2 cans of dice tomatoes with green chilis (Rotel)
1 packet of taco seasoning (4 Tablespoons of seasoning)
1/4 cup minced onion
Flour Tortillas (24)
Monterrey Jack Cheese (4 cups)
Directions:
Place chicken, tomatoes, taco seasoning and onions in the crockpot. Cook on low for 6 to 8 hours, or high 3 to 4 hours. Shred the chicken and stir.
Heat up a skillet or a griddle. Place down one flour tortilla. Top with the cheese and the chicken mixture. Place another flour tortilla on top. Cook for about 2 minutes on each side until they are brown. Continue doing this.
Label (24) Crockpot Quesadillas Put 3 piece chicken & bag of sauce in crockpot. Cook low 6-8 hrs or high 3-4. Shred Chick & stir. Heat skillet & make quesadillas. 12/5/13
