CORN AND TWO BEAN CHILI

1 can pinto or kidney beans
1 can black beans
1 can diced tomatoes
1 c salsa
1 c frozen corn
1/2 c minced onion
1 tsp chili powder
1 tsp ground cumin
1/2 c sour cream
1 c cheddar cheese

24 LABELS: Cook on low for 5 to 6 hours or high 2 1/2 to 3 hours. Top with sour cream and cheese. Serve with corn bread.

tortellini soup

1-20oz bag of fresh tortellini 2 cups of fresh spinach (using frozen for freezer group) 2 - 15oz cans of diced tomatoes 4 cups of chicken broth 1 - 8oz block of cream cheese, broken into chunks 1 tablespoon dried basil 1 tablespoon dried oregano 2 teaspoons salt 1 teaspoon freshly ground black pepper Label: Cook 4 to 5 hours in crockpot on high.

Tortilla Soup

1 32 oz box chicken or vegetable stock (I like Swanson 100% Natural or organic) 1 15 oz can refried beans (check ingredients carefully; organic is preferable) 1 15 oz can black beans, drained and rinsed (preferable organic) 1 15 oz can diced tomatoes (juice and all) 1 small can diced green chiles 1/2 package of frozen corn or 1 can corn (drained) 1-2 cup cooked instant brown rice 1/2-1 cup salsa 3/4 packet of taco seasoning a dash of cumin a dash of garlic powder Optional Toppings: sour cream, cheddar cheese, crushed tortilla chips Mix all ingredients together (except toppings) and let simmer over low heat for at least 10 minutes but longer is fine. FREEZER LABELS: Defrost and let simmer over low heat until warm.

Gnocchi and Basil Marinara Sauce

Fresh Basil Marinara Sauce makes about 4 cups 2 tablespoons olive oil 1 small onion, diced 2 garlic cloves, minced 1 (28 ounce) can peeled whole plum tomatoes, chopped 1 teaspoon salt red pepper flakes to taste 1 tablespoon sugar 2 stalks fresh basil leaves or 1 heaping teaspoon dried basil In a saucepan over medium high heat, add the olive oil and onion. Saute for 6 - 8 minutes until the onions are translucent. Add the garlic and saute an additional minute. Carefully pour in the tomatoes and add the salt, red pepper flakes, and sugar. Stir and bring just to a boil. Turn the heat down to a simmer, add the basil and continue cooking for about 20 minutes. Remove basil from the sauce. Cool, package and refrigerate until ready to enjoy. FOR LABELS: Prepare gnocchi according to package directions. Defrost and heat sauce. Top with cheese.
