Beef Nacho Casserole

1 lb ground beef
1 (12oz) jar chunky salsa
1 c. corn, drained
3/4 c Miracle Whip
1 T. Chili Powder
2 c. crushed tortilla chips divided
2 c. shredded Colby/Monterey Jack Cheese

Combine meat, salsa, corn, dressing & chili powder. Layer 1/2 each of the meat mixture, chips & cheese in pan. Repeat layers.

Label (12):
Thaw completely. Bake at 350 for 20 minutes or until heated. Top with shredded lettuce, tomato, sour cream if desired.

Sloppy Joes

Sausage and Potato Breakfast Bake

6 large eggs
2 pakages brown and serve sausage
1 1/2 Cups Cheddar Cheese
3 1/2 Cups Hash Browns
1 1/4 Cups Milk
1/4 tsp salt
1 tsp Dry Mustard
1 tsp Dry Onion

Cut links into slices and stir together all ingredients. Place in 11x7 greased pan.
Defrost in fridge for 24 hours. Bake 350 for 45 to 55 minutes.

Pasta Bake

1 - 16 oz package of ziti or rotini pasta
1 - 26 oz bottle of pasta sauce
26 oz of water (just use the empty pasta sauce bottle)
2 cups of mozzarella cheese

Preheat oven to 425 degrees. Thaw out pasta sauce. In a 9 x 13 pan (or 2 - 8 x8 pans) combine pasta sauce, pasta, and 1 jar (26 oz) of water. Stir. Cover with aluminum foil. Bake at 425 for 50 minutes. Remove aluminum foil and cover with mozzarella cheese. Bake until cheese is melted.

Spicy Honey Chicken

4-6 Chicken Breasts
2 t vegetable oil
Rub:
2 t granulated garlic
2 t chili powder
1/2 t onion powder
1/2 t coriander
1 t kosher salt
1 t cumin
1/2 t chipotle chili powder

Glaze:
1/2 C Honey
1T Cider Vinegar

24 labels: Spicy Honey Chicken
Drizzle oil over chicken, then toss chicken with the spice rub to coat all sides well. Use your hands and get in there! Grill or broil chicken a few minutes on each side, until cooked through.
Mix honey and vinegar and brush on chicken. Reserve 2T honey glaze for later. Take the rest and brush on chicken (both sides) in the final moments of grilling.

Chicken Enchiladas

4-6 chicken breasts cooked
Tortillas
1 pkg cream cheese
1 can cream of chicken soup
1 can tom sauce
1 chopped onion
1 chopped jalapeno
1 Tbsp cumin
1 Tbsp chili powder
1 can refried beans
cheese

Mix all ingredients and put some of mixture on bottom of pan. Roll ingredients into tortillas and top with the rest of the mixture and cheese. Bake at 350 for 30-45 min

Amazing Pork Tenderloin

2-3 pound pork tenderloin
1 pkg dry onion soup mix
1 cup water
3/4 cup red wine vinegar
3 Tbsp minced garlic
3 Tbsp soy sauce
freshly ground pepper to taste

Label: Amazing Pork Tenderloin Place in crockpot cook on low for 4 hours. Serve with cooking liquid on side as au jus. 2/11/10

Spaghetti Chicken

3 chicken breasts
1 can chicken broth
1 jar spaghetti sauce
2 Tbsp balsalmic vinegar
1/4 cup brown sugar
1 pkg noodles


Label: Spaghetti Chicken Place chicken & broth in crockpot & cook high for 4 hrs. After 3 hrs drain off most juice and shred meat. Pour sauce and add brown sugar & vinegar cook 1 hour. Cook noodles and top with mixture. 2/11/10

Crock Pot Pork Sandwiches

Crock Pot Pork Sandwiches

1 1/2 lbs. boneless pork roast1
1/4 cup BBQ sauce
1 cup Dr. Pepper
1 tsp. cumen
1 tbsp. minced onion

Label: Crock Pot Pork Sandwiches Put all ingredients into crock pot. Cook on high for 5-6 hours (add 2-3 hours if still frozen). Shred. Cook for 45-60 more minutes. Place on buns and enjoy. 2/11/10
