Sweet Soy Marinated Chicken

2 1/2 pounds boneless, skinless chicken pieces
1 cup honey
3/4 cup soy sauce
2 tbsp crushed garlic
1 tsp ground ginger

Label: (24)  Sweet Soy Marinated Chicken: Pour into baking dish, add 2 1/2 pounds chicken, cover with foil, and bake for 30 minutes at 350. Uncover, turn chicken and bake an additional 30 minutes. 12.1.16

Melt in your mouth Pot Roast

1 (3- to 4-pound) beef chuck roast
1 (12-ounce) can Cola (not diet)
3⁄4 cup dark brown sugar
3⁄4 cup Heinz chili sauce
3⁄4 cup ketchup
3⁄4 packet dry onion soup mix

Label: (12) Melt in Your Mouth Pot Roast
Combine all ingredients in a slow cooker, including the can of Coke. Cook on low 8 to 10 hours. 6/16/16

Beef and Broccoli

1.5 pounds flank steak, thinly sliced and chopped into 2 inch pieces
1 cup beef broth
⅔ cup soy sauce
⅓ cup brown sugar
1 Tbsp sesame oil
1 Tbsp minced garlic
¼ tsp red chili flakes
4 cups broccoli
2 Tbsp cornstarch plus 4 Tbsp cold water

Labels (24): Beef and Broccoli. Place steak ingredients into crock pot. Cook on high for 2-3 hours or low 4-5 hours. Minutes before serving, uncover the crockpot. In a small bowl whisk corn starch and water until dissolved. Add to crock pot and stir. Cover and allow to cook another 20-25 minutes.
Just before serving, steam broccoli. Drain. Stir broccoli into crockpot and serve. 3/10/16

Tortellini Bake

Tortellini Bake Ingredients:
1 bag of frozen cheese filled tortellini (19 or 20 oz)
1 jar of alfredo sauce (15 oz)
1/2 jar of marinara sauce
1/2 cup shredded mozzarella
1/2 cup grated Parmesan cheese
Preheat the oven to 350. Cook the tortellini according to package directions. Mix with the alfredo and marinara sauce in an 8x8 baking dish. Top with mozzarella and parmesean. Bake for fifteen minutes Then broil for five minutes to get a nice bubbly and golden topping. Serve immediately.


Label (24) Tortellini Bake - Cook the tortellini according to package, mix in bag with sauces. Place in 8x8 dish. Top with cheese. Bake 15 mins & broil 5 mins. 6/11/15

Cilantro Lime Chicken with Corn and Black Beans

3-4 chicken breasts
2 Tbsp olive oil
1 lime, juiced
1 bunch cilantro
1-16 oz bag of frozen corn
2 minced garlic cloves
1/2 finely chopped onion
1 can black beans, drained and rinsed
1 tsp cumin or chipotle powder
salt and pepper to taste

Place all ingredients into a ziploc bag and freeze.

Labels (24): Place 3-4 chicken breasts and ingredients in crockpot. Cook on low for 8 hours or high for 4 hours. 2/26/15

Slow Cooker Orange Chicken

1 1/2 lb. boneless chicken breasts, chopped into large bite-sized chunks
1/3 cup flour olive oil
1/2 Tbl. salt
1 teaspoon balsamic vinegar
3 Tbl. ketchup
4 oz. frozen orange juice concentrate (put in mixing bowl first, and let thaw as you add other ingredients)
4 Tbl. brown sugar
1/4 tsp. ginger
1 tsp red pepper flakes

In a bowl, combine and mix the orange juice, brown sugar, vinegar, salt, ketchup, ginger and red pepper flakes. Pour the flour in a small bowl. Cover the chicken breast chunks in flour and shake off the excess.
Cooking Directions: Pour a small amount of olive oil in a skillet and brown the flour-covered chicken. The chicken doesn't need to be fully cooked since it's going in the crock pot. After the chicken is done cooking, pour the pieces into the crock pot. Then cover the chicken with your sauce mixture and give the pot a stir. Cook on low for 5-6 hours or on high for 2-3. Serve over rice and even add veggies if you want a healthier meal.

Label (24): Orange Chicken Put 1 tbsp oil in skillet & brown chicken. Put chicken in crock pot & cover w/ sauce & stir. Cook low 5-6 or high 2-3 hrs. Serve over rice & w/ veggies. Detail instructions on blog. 1/17/15

Crock Pot Chili

Brown and drain:
1/2 lb ground beef
1 lb Italian sausage
Pour into crockpot with:
3 to 4 cans diced tomatoes
2 cans kidney beans
1 can pinto beans
1 can tomato soup
1 onion, diced
1 green pepper, diced
2 Tbsp. chili powder
1 tsp. cumin
2 bay leaves
2 cloves garlic, minced
salt to taste

Cook on high 2 to 3 hours

Cafe Rio Crockpot Chicken

Slow Cooker Root Beer Pulled Pork

2 lb Pork Tenderloins 12 oz Root Beer 1 cup BBQ sauce 1 tsp kosher salt 1/4 tsp ground black pepper In a slow cooker, whisk together the root beer, BBQ sauce, salt and pepper. Add pork tenderloins. Slow Cooker General Tso's Chicken

4 boneless skinless chicken breasts or 2 pounds boneless skinless chicken thighs 1/2 cup water 3 Tbsp hoisin sauce 4 Tbsp soy sauce 1/2 cup brown sugar 3 Tbsp ketchup 1-2 tsp fresh ginger 2 tsp minced garlic 1 tsp crushed red pepper salt to taste 2 Tbsp cornstarch mixed with water Spray inside of crockpot with cooking spray. Place chicken inside. In a medium bowl, whisk together all remaining ingredients EXCEPT cornstarch and salt. Pour over chicken. Cook on high 2 hours or low 4-5 hours. You may need a little longer is using chicken thighs or frozen chicken. Remove chicken and shred or chop. Return to cooker. Stir cornstarch into 2 tablespoons of water to make a slurry. Add to chicken mixture and allow mixture to cook about 30 more minutes on high. Add more cornstarch if needed. Add salt to taste. Serve over rice and sprinkle with sesame seeds or green onions. Labels (24): Spray inside of crockpot with cooking spray. Place 4 chicken breasts inside. Pour ingredients except cornstarch/salt. Cook on high 2 hours or low 4-5 hours. Remove chicken and shred or chop. Return to cooker. Stir cornstarch into 2 tablespoons of water to make a slurry. Add to chicken mixture and cook about 30 more minutes on high. 1/23/14

White Chicken Chili

2 Tbsp olive oil 1 Tbsp cornstarch 1 medium onion chopped 1 can chopped green chilis, drained 2 cans white beans (drained) 2 tsp cumin 2 tsp chili powder 1 lb. chicken tenders 2 cups chicken broth 1 tsp salt 1 tsp pepper Place all ingreadients except chicken broth in large freezer bag, toss to coat and freeze. When ready, place ingredients in crock pot, add chicken broth and cook on low for 4-5 hours. Remove chicken, shred and return to crockpot. Label(24): Place ingredients in crock pot. Add chicken broth and cook on low for 4-5 hours. Remove chicken, shredd and return to crock pot.

Crockpot Mongolian Beef

2 pounds beef flank steak, cut into stir fry sized strips
2 Tbsp olive oil
3/4 tsp minced ginger
3 cloves garlic, minced
1 cup soy sauce
1 cup water
1 cup brown sugar
2/3 cup cornstarch
2/3 cup shredded carrots
3 medium onions, chopped

Coat flank steak pieces in cornstarch. Add remainder of ingredients to crockpot and stir well to combine. Place flank steak into the crockpot and cook on high for 2-3 hours or on low 4-5 hours. Serve over rice or noodles, if desired.

Labels (24): Crockpot Mongolian Beef. Coat flank steak in cornstarch. Combine remaining ingredients and place in freeger bag. To serve: Thaw. Cook in crockpot on high for 2-3 hours or on low for 4-5 hours. 9-5-13

Beyond Easy Pulled Pork

4-5 lb pork butt roast
2 yellow onions, sliced

Dry Rub
3 tbsps chili powder
1 tsp coriander
2 tsps cumin
2 tsps onion powder
1 tablespoon dried parsley
¼ teaspoon chipotle powder
2 tsps sea salt

Mix all dry rub ingredients together. Rub the entire roast with the dry rub (you should use it all.) Place a layer of onions on the bottom of your slow cooker. Place the roast on top. Put the rest of the sliced onions on top of the slow cooker. NO LIQUID NECESSARY! Cook the roast on high for 5-6 hours and then turn down to low for another 3-4 hours or until the roast is literally falling apart and easy to shred.   Label (12) Beyond Easy Pulled Pork- Place layer of onions on the bottom of slow cooker. Place the roast on top. Put the rest of the sliced onions on top of the slow cooker. Cook the roast on high for 5-6 hours and then turn down to low for another 3-4 hours or until the roast is literally falling apart and easy to shred. 5/21/13.

Taco Pasta


1 1/2 pounds ground beef 
12 ounce dry pasta shapes (med. sized shells or salad macaroni)
1 small onion, chopped (or 1 Tbsp minced onion flakes)
1 clove garlic, minced 
1 cup salsa
1 packet taco seasoning 
6 ounce cream cheese 
1/2 cup sour cream 
Salt and pepper
Shredded Cheese for topping

In a large skillet, cook the ground beef and onion over medium-high heat until no longer pink. While ground beef is cooking, boil pasta 1 minute less than package directions. Once the meat is cooked through, drain off the excess fat and mix in the garlic. Cook for another minute then mix in the salsa and taco seasoning and let simmer over medium heat for about 5 minutes.  Add the cream cheese and sour cream to mixture and simmer till the cream cheese is thoroughly melted and blends well. Add salt and pepper if desired. Let cool to a little warmer than room temperature, then place in labeled bag.
Labels (12): Taco Pasta: Thaw and bake in 350 degree oven for 30 minutes or until warm. Top with grated cheese.  2/26/13

Cranberry Chicken


Ingredients:

·         1 can whole berry cranberry sauce
·         1 packet dried onion soup mix
·         1 cup Catalina or French salad dressing
·         2 teaspoons garlic, minced
·         2 pounds boneless, skinless chicken breast

 

Freezing Directions:

Thaw. Dump bag contents and 2 pounds boneless, skinless chicken breast in a slow cooker. Cook on high 3-4 hours or low 5-6 hours or until chicken is tender. Serve over rice

Crock Pot Santa Fe Chicken

Crock Pot Santa Fe Chicken

Ingredients:

  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  • salt to taste

Directions:

    Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice or in a tortilla with chopped scallions, fresh cilantro, fat free sour cream and reduced fat cheddar.

    Label (12) Crock Pot Santa Fe Chicken  Put in crockpot & cook low for 10 hrs or high for 6 hrs.  Shred chicken & return to crockpot.  Serve over rice or in tortilla with fav toppings.  11/27/12

    Instructions

    1. Mix all ingredients together
    2. Bake at 350 for 45 minutes or stew in slow cooker for 4-6 hours. For the last 20 minutes of cooking time, dump in 1 can pineapple chunks, without the juice. Cook remaining 20 minutes.
    3. Serve over rice.
    Label (24) Crock Pot Hawaiian Chicken Place chicken in crock pot, cover w/ sauce cook for 4-6 hrs on low. Last 20 mins add pineapple w/o juice. Serve over rice.  10/18/12

    Flank Steak

    1 Flank Steak - 1 3/4 lbs to 2 lbs (cut in half)




    1/2 small can of green chiles

    1 large red onion, chopped

    1/4 teaspoon black pepper

    1/2 teaspoon brown sugar

    1 teaspoon of chili powder

    1/4 teaspoon of cumin

    1/2 cup of water

    1 tbsp of olive oil

    1-2 cloves of garlic minced (depending on taste)

    Cook in slow cooker on low for 4-5 hours if you prefer it sliced, cook 5-6 hours if you prefer it shredded.

    Serve shredded over rice, in a tortilla or even plain.

    Braided Pizza Loaf Recipe


    Braided Pizza Loaf Recipe:



    1 roll refrigerated pizza dough

    1/2 c. marinara/pizza sauce

    1 1/2 c. mozzarella cheese, grated

    Pizza toppings (pepperoni, green peppers, olives, mushrooms)

    2 Tbl. grated Parmesan cheese

    1 Tbl. olive oil or melted butter

    1/2 tsp. garlic powder

    1 tsp. dried Italian seasoning



    Preheat oven to 400 degrees. Unroll pizza dough on a greased baking sheet. Spread marinara sauce down the middle of your dough.

    Add mozzarella cheese and toppings of your choice.



    Cut 1 inch diagonal strips up each side of the dough.



    Fold 1 inch strips up and over pizza filling, alternating sides to get a braided look. Brush the tops of the braided dough with olive oil or melted butter (I've used both and there's not much difference in result) and then sprinkle with the garlic, Italian seasoning and Parmesan cheese (I mixed all of these together and then sprinkled on top).



    Label (10) Braided Pizza Loaf Recipe Bake at 400 degrees for 15-20 minutes, or until golden brown. Let sit for a few minutes then cut into slices and serve.  07/19/12

    Slow Cooker Orange Chicken

    Ingredients:
     • 1 1/2 lb. boneless chicken breasts, chopped into large bite-sized chunks
    • 1/3 cup flour
    • olive oil
     • 1/2 Tbl. salt
    • 1 teaspoon balsamic vinegar
    • 3 Tbl. ketchup
     • 4 oz. frozen orange juice concentrate (put in mixing bowl first, and let thaw as you add other ingredients)
    • 4 Tbl. brown sugar
     • 1/4 tsp. ginger
     • 1 tsp red pepper flakes (opt. but gives some spice to it)

     In a bowl, combine and mix the orange juice, brown sugar, vinegar, salt, ketchup, ginger and red pepper flakes. Pour the flour in a small bowl. Cover the chicken breast chunks in flour and shake off the excess. For freezing you can either prepare completely and bag and freeze. I like to do some of the prep on cooking day so that it is a fresher meal. To do this you bag the floured chicken chunks into a freezer bag. Then place the sauce into a separate freezer bag. Then freeze all in a labeled gallon sized freezer bag with directions below written on label. Cooking Directions: Pour a small amount of olive oil in a skillet and brown the flour-covered chicken.
