Chicken Cordon Bleu Bake

2 pkg stuffing
1 can cream chicken soup
1 cup milk
1/2 tsp pepper
3/4 lb sliced deli ham cut into 1 inch strips
1 cup swiss cheese shredded
2 cups cheddar cheese shredded
2 cups cooked chicken


Put chicken in dish sprinkle w/ pepper, layer with ham, swiss cheese and 1 cup cheddar cheese. Then add the soup and milk mixture and top w/ stuffing. Sprinkle w/ remaining cheddar cheese. Bake 350 for 45 min covered then 10-15 min uncovered.

Label (24) Chicken Cordon Bleu Bake Thaw and bake covered at 350 for 45 min and then uncovered and bake for 10-15 min longer. 10/28/10

Lemon Poppy seed Chicken

1 cup Pineapple Juice
1 cup Soy Sauce
1 1/2 ounce Lemon Gelatin
2 Tlb Poppy seeds
6 Chicken Breasts

Combine Pineapple Juice and Soy Sauce and add chicken. Put other ingredients in a separate baggie.

Label (24): Thaw to marinade chicken. Preheat oven to 350. Arrange chicken on a baking sheet. Pour 1/2 cup of sauce mixture on chicken. Then sprinkle half of the gelatin and bake for 30 min. Flip chicken and sprinkle the remaining gelatin and all of the poppy seeds. Cook until brown (about 30 min). 9/14/10

Meatball Sub Sandwiches

Meatballs
2 cups spaghetti sauce
Mozzeralla cheese
Rolls

Label: Meatball Sub Sandwiches Heat meatballs and sauce until heated thru. Put meatballs and sauce on rolls and top with cheese. Place under broiler until cheese is melted.

Italian Meatball Soup

12 labels: Italian Meatball Soup. Defrost. In a large pot add 5 cups water and all ingredients, except pasta, simmer 10-15 minutes. Separately cook pasta al dente and add to other ingredients. Simmer for another 5 minutes. Serve topped with cheese. 9-14-10

Lipton Onion Pork Chops

5-6 pork chops (with or without bones)
1 1/2 cups water
1 pkg Lipton onion dry soup mix

Place pork chops & soup mixture in a 9x13 baking dish and cover with foil. Bake at 200 for 30-40 minutes.

Honey Lime Chicken Enchiladas

1/3 cup honey
1/4 cup lime juice
1 Tbsp chili powder
1/3 large onion, diced and sauteed
1 clove garlic
1 1/2 pds chicken, cooked and shredded
16 corn tortillas
1 pd monterey jack cheese, shredded
16 ounces green enchilada sauce
1 1/2 cups heavy cream

Mix the first 5 ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hr. Pour about 1/2 cup enchilads sauce on the bottom of a 9x13 baking pan. Fill corn tortillas with chicken and shredded cheese, saving about 1 1/2 cups of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of enchiladas and sprinkle with cheese. Bake at 350 for 30 min until brown and crispy on top.

Southwestern Burgers

3 pds ground beef or turkey

1 jalapeno minced (remove ribs & seeds)

4 ounces grated Montery Jack Cheese

1/2 cup dried breadcrumbs

4 Tbsp mayo

Course salt and ground pepper

8 hamburger buns





Mix very gently all ingredients together and form patties. Grill until done about 5-8 minutes per side. Serve on buns with desired toppings.

Cheesesteak Subs

2 Tbsp butter
1 onion, halved and sliced into thin half moons
2 garlic cloves, finely minced
1/4 tsp dried oregano
3 Tbsp A-1 steak sauce
1 1/2 pds deli roast beef, cut into 2-inch strips
Salt and Pepper
6 sub rolls, split partially open lengthwise
6 slices provolone cheese


Preheat broiler. In large skillet melt butter & add onion cook until soft. Stir in other mixture and cook for a few minutes until meat is heated through. Season w/ salt and pepper.

Place rolls on baking sheet, add meat and top w/ cheese. Broil until cheese is melted about 2 minutes. (do not leave the oven so they will not burn.

Label 12: Cheesesteak Subs Preheat Broiler. Cook onions till soft, add meat mixture & cook for 2 minutes. Add salt & pepper. Place on rolls on baking sheet, add cheese and broil for 2 minutes. KEEP WATCH SO THEY DO NOT BURN. 9/14/10
