Indonesian Chicken

4-6 chicken breasts
1 cup honey
3/4 cup soy sauce
1/2 cup finely minced ginger
1/4 cup minced garlic

Heat ingredients in sauce pan for 5 minutes. Place chicken skin side down in casserole dish, pour marinade over chicken and refrigerate overnight. Preheat oven to 350 cook covered for 40 minutes. Uncover turn pieces over and inrease heat to 375 and cook for 10-15 minutes longer basting occasionally.  Bake until chicken is 160 degrees.

Pot Roast

3 to 4 large onions (if desired)
1 (5-10 LB) shoulder or rump roast
garlic powder to taste
salt and pepper to taste
3 (10 1/2 ounce) cans mushroom gravy
cooking sherry (1 empty gravy can full)
6-8 carrots, peeled and cut (if desired)

Preheat oven to 425 degrees. Slice one of the onions into thin rings. Place in the bottom of a large roasting pan. Season roast generously with garlic powder, salt & pepper. Place roast on top of onions, fat-side up. Place uncovered in the oven until browned 15-20 minutes. Meanwhile, quarter the remaining onions. In a bowl, combine the gravy and sherrry. Place onions around roast. Pour gravy mixture over meat. Cover pan with aluminum foil. Reduce heat to 350 degrees and return roast to oven. Cook 2-4 hours or until tender. Thirty minutes before roast is done, add carrots to the pan. Remove roast from oven and let rest 10-15 minutes before slicing. Serve with gravy. Roast can be cooked one day ahead.

Grilled Dijon Pork Chops

6 Tbs dijon mustard
6 Tbs brown sugar
3 Tbs unsweetened apple juice
3 Tbs worcestershire sauce
4-6 pork chops

Grill until done. Baste with remaining marinade.

Biscuits & Gravy

1 LB Sausage
2 TBS Flour
3 Cups Milk
Salt and Pepper to taste

Brown Sausage until done. Whisk flour with one cup of milk until smooth. Add mixture to sausage and cook until flour is browned. Add remaining milk salt and pepper. Cook until mixture thickens. Serve over biscuits.

Meatball Sub Sandwiches

Meatballs
2 cups spaghetti sauce
Mozzeralla cheese
Rolls

Label: Meatball Sub Sandwiches Heat meatballs and sauce until heated thru. Put meatballs and sauce on rolls and top with cheese. Place under broiler until cheese is melted.

Polynesian Chicken Marinade

1 gallon Soy sauce (low sodium)
3 gallons water
1 c fresh garlic chopped fine
1 c ginger chopped fine
1.5 lbs brown suger
1 bunch green onions chopped fine
Aprox. 48 chicken breasts


Mix ingredients into lg cooler. Add frozen chicken. Marinade 2 days. grill until cooked. Be sure to use frozen chicken.

Label (no labels) Polynesian Chicken Marinade Thaw, let marinade for 2 days. Grill until done. 4/29/10

Caribbean Chicken

1/2 c lemon juice
1/3 c honey
3 tbsp canola oil
6 green onions sliced
3 jalapeno peppers seeded and chopped
3 tsp dried thyme
3/4 tsp salt
1/4 tsp ground allspice
1/4 tsp ground nutmeg
4 boneless skinless chicken breasts

in blender combine first 9 ingredients cover and process until
smooth.pour into resalable plastic bag, add chicken seal bag and coat.
drain and discard marinade, grill until done

Funeral Potatoes

12 lg potatoes or 1 (32 oz) bag frozen shredded hash browns
2 (10 oz) cans cream of chicken soup
2 c sour cream
3 c grated cheddar cheese
1/2 c butter melted
1/3 c chopped onion

peel potatoes and boil 30 minutes until just tender.
cool and grate into greased 9x13 baking dish, or put
hash browns into baking dish. combine soup, sour cream,
1 c cheese the 1/2 c melted butter and onions. gently
blend into potatoes, cover top with remaining cheese.
Bake at 350 for 30 minutes.

Pork Carnita Tacos

2-5 LB pork roast
3 TBS tomato paste
4 garlic cloves minced
1 bay leaf
2 tsp cumin
1 TBS oregano
1 TBS pepper
2 ½ tsp salt
1 yellow onion chopped
3 cups chicken stock

Place all ingredients in a stock pot. Add enough water to cover roast bring to a gentle simmer on stove and braise for 3 hours. Remove roast and break apart into chunks. Heat oven to 450 degrees. Place roast chunks on cookie sheet and sprinkle with pepper, Cheyenne pepper and salt. Cook 20-25 minutes until golden and a little crispy. Serve with warm corn tortillas. Garnish with pico de gallo and guacamole.

Wingers Sticky Finger Salad

6-7 Breaded Chicken Fingers

Sauce
1 cup Franks red hot sauce
1 cup brown sugar
1 Tbsp butter

Mix all ingredients in sauce pan on low heat. Stir slowly until sugar is dissolved into the sauce. If it need to be thicker add more brown sugar or let it stand.

Coat chicken fingers well with sauce and bake for 12 min on each side. For crispier chicken put under the broiler for 3 min on each side. Let cool for a few min and serve over salad with Ranch Dressing.

Chicken and Gravy

Chicken and Gravy

1 can cream of mushroom soup
1 can cream of chicken soup
1 cup heavy whipping cream
4 chicken breasts

season with season salt, paprika, parsley and pepper

Bake for 1 hour at 350 degrees. Serve with mashed potatoes.

Frittata

Frozen potatoes
1 lb sausage cooked
1/2 lb bacon cooked (cut into bite size pieces)
1/2 lb ham cooked
1 cup diced onions
1 cup diced bell pepper
12 eggs
1 cup milk
salt & pepper
1/4 tsp dry mustard
shredded cheese


Spray 13x9 with oil. Layer potatoes, sausage, bacon, ham, onions, & peppers. Wisk milk, eggs, salt, pepper and dry mustard, pour evenly over top and top with cheese. Refrigerate over night. Bake at 350 for 40-60 minutes.


Frittata: Thaw completely. Pour egg mixture over top evenly and top with cheese. Bake at 350 for 40 to 60 minutes. 1/30/09

Stuffed Pasta Shells

1 pound jumbo shell pasta (40 shells)
Cooking spray
1 (12-ounce) carton 1% low-fat cottage cheese
1 (15-ounce) carton ricotta cheese
1 cup (4 ounces) shredded Asiago cheese
3/4 cup (3 ounces) grated fresh Parmesan cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1/4 teaspoon black pepper
1/4 teaspoon salt
1 (10-ounce) package frozen chopped spinach, thawed and drained
6 cups Smoky Marinara
1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
1 pound ground sweet Italian sausage


Cook pasta according to package directions, omitting salt and fat. Drain and set aside.

Preheat oven to 375°.

Coat 2 (13 x 9-inch) baking dishes with cooking spray; set aside.

Place cottage cheese and ricotta cheese in a food processor; process until smooth. Combine cottage cheese mixture, Asiago, and next 6 ingredients (Asiago through spinach).

Spoon or pipe 1 tablespoon cheese mixture into each shell. Arrange half of stuffed shells, seam sides up, in one prepared dish. Pour 3 cups Smoky Marinara over stuffed shells. Sprinkle with 1/2 cup mozzarella. Repeat procedure with remaining stuffed shells, Smoky Marinara, and mozzarella in remaining prepared dish.

Cover with foil. Bake at 375° for 30 minutes or until thoroughly heated.

To freeze unbaked casserole: Prepare through Step 5. Cover with plastic wrap, pressing to remove as much air as possible. Wrap with heavy-duty foil. Store in freezer for up to 2 months.

To prepare frozen unbaked casserole: Preheat oven to 375º. Remove foil; reserve foil. Remove plastic wrap; discard wrap. Cover frozen casserole with reserved foil; bake at 375º for 1 hour and 10 minutes or until the shells are thoroughly heated.
