Bacon Ranch Crockpot Chicken

2 butterball turkey bacon strips, cooked and shredded
1 tsp minced garlic
1 package ranch dressing mix
1 10.75 oz can condensed cream of chicken soup (98% fat free)
1 cup fat-free sour cream
16 oz. chicken breasts
8 oz. pasta (I used rigatoni)
Combine the first five ingredients. Place chicken in slowcooker and pour sauce over the top. Cook on high for 3.5 hours. Serve over hot noodles. Label (24) Bacon Ranch Slowcooker Chicken Place chicken in crock pot, pour sauce over, cook on high 3.5 hrs. Serve over cooked noodles. 10/29/15

1/4 c brown sugar
2 1/2 T balsamic vinegar
2 T chopped shallots

Tortellini Bake

Tortellini Bake Ingredients:
1 bag of frozen cheese filled tortellini (19 or 20 oz)
1 jar of alfredo sauce (15 oz)
1/2 jar of marinara sauce
1/2 cup shredded mozzarella
1/2 cup grated Parmesan cheese
Preheat the oven to 350. Cook the tortellini according to package directions. Mix with the alfredo and marinara sauce in an 8x8 baking dish. Top with mozzarella and parmesean. Bake for fifteen minutes Then broil for five minutes to get a nice bubbly and golden topping. Serve immediately.

Zesty Chicken BBQ (Crockpot)

6 Chicken Breasts
1 (12 oz) Bottle Baby Ray's BBQ Sauce
1/2 C Italian Salad Dressing
1/4 C Brown Sugar
2 T Worcestershire Sauce

Label-24 Zesty Chicken Crockpot BBQ
Place Chicken and all ingredients in a crockpot.  Cook on High for 2-3 hours, shred chicken and cook on Low for an additional hour.  Serve on buns.  10-29-15

1 large onion
1/2 tsp salt

Brown and add the remaining ingredients and simmer 30 minutes.

1 1/2 Tbsp flour

1 can tomato soup
2 bay leaves

Slow Cooker Cranberry Pork Roast


Ingredients


  • 2.5 pound bone-in pork shoulder
  • 15oz can whole berry cranberry sauce
  • 1/4 cup honey
  • 1/4 cup dried minced onion

Directions


  1. Combine all ingredients in your slow cooker and cook on “low” setting for 6-8 hours or until pork shreds easily with a fork.
  2. Serve the leftover cranberry mixture with the meat - so yummy.

 Freezer:

Combine all ingredients in a gallon-sized plastic freezer bag and freeze for up to three months.  When ready to eat, thaw overnight in refrigerator.  Add to slow cooker and cook on “low” setting for 6-8 hours or until pork shreds easily with a fork.  Remove bones and shred meat.

Salsa Verde Chicken

1 1/2 Lbs Chicken
1 (16 oz) Jar Green Salsa
2 Chicken Boullion Cubes
2 Cups Water
3 Tbsp Minced Onions
1/2 t Cumin
2 Cloves Garlic
1 (4oz) Can Diced Green Chilis


Label (24) Salsa Verde Chicken
Spray crockpot with cooking spray.  Dump contents of bag and 2 CUPS OF WATER into crockpot.  Cook on low for 5-6 hours or high for 3 hours (if using frozen chicken, add an hour into cooking time).  Shred chicken and mix with remaining ingredients.  Serve as filling for tacos, burritos, salad or nachos.  9-3-15

Slow Cooker Shredded Beef Tacos

2 lbs beef chuck roast
1 packet of taco seasoning
1 cup salsa verde
15 ounces canned corn (do not drain)
1/2 cup beef broth




Labels (12) Slow Cooker Shredded Beef Tacos  Place all ingredients in the crock pot.  Cook on high for 3-4 hours or low for 6-8 hours.  Pull roast out when done cooking.  Shred meat and put back in crock pot and mix together.  Eat with favorite taco toppings in shells.  9-3-15

CORN AND TWO BEAN CHILI

1 can pinto or kidney beans
1 can black beans
1 can diced tomatoes
1 c salsa
1 c frozen corn
1/2 c minced onion
1 tsp chili powder
1 tsp ground cumin
1/2 c sour cream
1 c cheddar cheese

24 LABELS: Cook on low for 5 to 6 hours or high 2 1/2 to 3 hours. Top with sour cream and cheese. Serve with corn bread.

Slow Cooker Cilantro Lime Chicken

Ingredients:

1  16 oz. jar salsa
1  1.25 oz. package dry taco seasoning mix
1 lime juiced
3 Tbsp chopped fresh cilantro
3-4 chicken breasts

Instructions:

Place salsa, taco seasoning, lime juice and cilantro into slow cooker and stir to combine.  Add chicken breasts and stir to coat with the salsa mixture.  Cook on high for 4 hours or low for 6-8 hours. Shred chicken and return to slow cooker for 30 minutes.

Label (24)  Slow Cooker Cilantro Lime Chicken.  Place chicken & sauce in crock pot.  Cook high 4 hours or low 6-8 hours.  Shred chicken and cook additional 30 min.

Penne Russo

1 pkg. penne pasta
1 t. olive oil
2 cloves garlic
4-6 slices bacon, chopped
1/2 t. red pepper flakes
2 cans diced tomatoes
1 c. heavy cream
2 TBS dried basil
1 tsp. salt
Parmesan cheese

Heat oil in large skillet over medium heat.  Saute garlic, bacon and red pepper flakes for 1 minute. Stir in tomatoes, cook for 3 min. Stir in cream. Simmer for 15 minutes or until thickened.  Stir in chopped basil.  Toss with cooked pasta until evenly coated.  Serve with parmesan cheese on top.

Labels (12) Penne Russo: Cook pasta according to directions. While cooking, heat oil in large skillet over medium heat.  Saute bacon mixture for 1 minute. Stir in cream and tomato mixture. Simmer for 15 minutes or until thickened.  Toss with cooked pasta until evenly coated.  Serve with parmesan cheese on top. 9/3/15

Grilled Kielbasa and Pesto Penne

Ingredients:
  • 1 lb Penne Pasta
  • 1 lb cooked Kielbasa
  • 1/2 cup Pesto sauce
  • 1 tablespoon dried basil
  • Dash of dried Oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
Directions:
  1. Preheat the grill or griddle on medium heat.
  2. Cook the pasta according to the directions on the box. Be sure to season the boiling water with salt before adding in the pasta.
  3. Keep the Kielbasa whole if using an outdoor grill. Cut the Kielbasa into 1/2 inch slices if you're using a stovetop griddle. Grill the Kielbasa until slightly browned and marked with grill marks. 
  4. Return the drained pasta to the pot. Toss in the Kielbasa (if you keep the Kielbasa whole, be sure to cut it into slices before adding it to the pasta), Pesto sauce, dried basil, dried Oregano, and garlic powder. 
  5. Toss together the ingredients. 
  6. Season with salt and pepper to taste.
  7. Serve warm.
Label (12) Grilled Kielbasa & Pasta Cook Pasta, while cooking pasta cook sausage in griddle until done, add sauce bag to meat.  When pasta is done toss together.  Top with cheese.

Grilled Chicken Marinade

1/4 cup & 2 tbsp vegetable oil
3 tbsp soy sauce
2 tbsp worcestershire sauce
2 tbsp red wine vinegar
1 tbsp & 1 tsp lemon juice
1 1/2 tsp dry mustard
1/4 tsp salt
3/4 tsp black pepper
1/4 tsp finely minced fresh parsley

Baked Kung Pao Chicken

Ingredients
  • 3-4 chicken breasts, cut into bite sized pieces
  • Salt and pepper to taste
  • 1½ cup cornstarch
  • 3 eggs, beaten
  • ¼ cup canola oil
  • ¼ cup soy sauce
  • ¼ cup vinegar
  • 1 tablespoon red chili paste (like Sriracha)
  • 1 teaspoon minced garlic
  • ¼ cup brown sugar
  • ½ tablespoon cornstarch
  • 1 red pepper, chopped
  • ¼ cup peanuts
  • green onions, chopped for garnish
Instructions
  1. Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In separate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch then coat in egg mixture. (Yes you dip the chicken in cornstarch first, then the egg.. trust me. :))
  3. Heat canola oil in a large skillet over medium-high heat and cook chicken until browned. Place the chicken in a 9 x 13 greased baking dish.
  4. In a medium sized mixing bowl, combine soy sauce, vinegar, red chili paste, minced garlic, brown sugar, and cornstarch. Pour over chicken and toss to coat. Add the chopped red peppers and peanuts on top. Bake for 1 hour.
  5. Stir the chicken every 15 minutes or so to coat them in the sauce.

6 Boneless Porkchops 1 Ranch Dry Season Packet 1 Can of Cream of Chicken Soup 1 Can of milk Mix well combine in crockpot and cook on low for 4-6 hours. Label(24) Crockpot Ranch Porkchops. Place in crockpot and cook on low for 4-6 hours. 4/16/15

Salsa Soup

1 jar of Costco Mango Salsa 1/2 jar of Costco Jack Medium Salsa 12 oz of chicken bullion chicken--BEST is rotisserie chicken from Costco--but canned or frozen chicken works 2 cups of cheddar cheese 1 cup of sour cream bag of tortilla chips Combine first 4 ingredients in a crockpot and cook on low for 6 hours or high for 2. Add last 3 ingredients for serving. FOR LABELS--12: CHICKEN SALSA SOUP Place soup mixture in crock pot Add 2 cups of cooked, diced chicken (canned or rotisserie) Cook on low for 4-6 hours or high for 2 hours Add cheese, sour cream and chips for serving

2 pounds boneless skinless chicken thighs
1/2 to 1 cup of your favorite Caesar dressing
1/2 cup shredded Parmesan cheese 
2 teaspoons of dried parsley
1/2 teaspoon ground pepper
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular sized hamburger buns 1.


 Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours. Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat. Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot. Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and lettuce to serve.


Label: (24)Chicken Caesar Sandwiches. Put chicken in crockpot w/ 1-2 c water cook 4-6hrs. Take out,shred,drain water,put back in w/bag of sauce. Cook 30 min. Serve on bun w/lettuce & cheese. If you want super easy, use rotisserie chicken and skip the crockpot.  4/13/15.

Chicken Divan

4 cups cooked chicken 4 pkg frozen broccoli 2 cups milk 2 cups mayo 2 Tbl lemon juice 4 cans cream of mushroom soup 3 tsp curry powder Place cooked broccoli and chicken on the bottom of the pan. Mix sauce and pour over. Top with parmesan cheese if desired. Labels (24) Thaw. Bake at 350 degrees for 45 minutes. Serve over rice. 4/16/15

Fresh raspberry chicken

6 Boneless Skinless Chicken Breasts 1/2 Cup Raspberry Preserves 1/2 Cup Frozen Pineapple Juice Concentrate, Thawed 1/2 Cup Soy Sauce 2 T Rice Wine Vinegar 1/2 tsp Chili Powder 1/2 tsp Curry Powder 1/2 tsp Garlic Powder 1/4 Cup Raspberries, Mashed 1/4 Cup Fresh Raspberries (For Garnish) Mix all ingredients (except raspberries for garnish and chicken). Put thawed chicken in casserole dish. Pour over mixture and cover with tinfoil for 2 hours (or overnight) to marinate. Bake covered at 350 degrees for 30-40 minutes. Transfer chicken to serving platter and top with juices and fresh raspberries. Can serve over white or wild rice. Label(24): Fresh Raspberry-Place chicken in baking dish and cover w/ contents in sauce bag. cover with tinfoil. Bake @ 350 for 30-40 minutes. Top with pan juices and garnish with raspberries. Can serve over rice. 4-16-15

Chicken Parmesan Casserole

Chicken Parmesan Casserole: 4 cups fully-cooked chicken, shredded or cubed 1 jar (28 ounces) of marinara sauce 1/2 cup Parmesan cheese 1 1/2 cups shredded mozzarella cheese 1 cup panko or whole wheat bread crumbs 1-2 tablespoons olive oil fresh, chopped herbs (parsley, basil, oregano, etc), to taste (or use pre-seasoned bread crumbs) salt and pepper, to taste Instructions 1) Preheat oven to 350 degrees. 2) Grease an 8x8 casserole dish with cooking spray. 3) Layer the chicken in the bottom. Dump in the marinara sauce and mix with the chicken. Next, top with cheeses until all the chicken is covered. 4) In a small bowl, mix the breadcrumbs, olive oil, fresh herbs and a dash of salt and pepper together. 5) Sprinkle the seasoned breadcrumbs on top. 6) Bake for about 20-25 minutes or until golden on top and bubbling on the sides. Label: (12) Chicken Parmesan Casserole Thaw in the fridge overnight. Bake for about 20-25 minutes or until golden on top and bubbling on the sides. Balsamic Pork Roast

Ingredients: 2 pound boneless pork shoulder roast (sirloin roast) kosher salt, to taste 1/2 tsp garlic powder ½ teaspoon red pepper flakes 1/3 cup chicken or vegetable broth 1/3 cup balsamic vinegar 1 tablespoon Worcestershire sauce 1 tablespoon honey Label: Season the pork with salt, garlic powder and red pepper flakes and place it into the slow cooker. Angel Chicken Pasta

6 chicken breasts 1/4 cup butter 1 package dry italian salad dressing mix 1 can of condensed golden mushroom soup 1/2 can chicken broth 4 ounces cream cheese with chives 1 pound angel hair pasta Meal Preparation Directions: In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in golden mushroom soup and chicken broth. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in crockpot and pour sauce on top of chicken. Cook on high for 3-4 hours (Depending on crockpot). You can shred chicken OR leave it as whole chicken breasts. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta. Label: (24) Directions for freezer meal: Angel Chicken Pasta Thaw bag. Spread over 6 chicken breasts in a crockpot. Cook for 3-4 hours on high. You may shred the chicken OR leave them as whole breasts for your meal. While chicken in cooling down prepare pasta noodles. Serve chicken and sauce over noodles. 4/16/15

Ranch Cheddar Burgers

Ranch Cheddar Burgers Ingredients: 2 lbs ground beef 1 cup shredded or cubed cheddar cheese 3 Tbsp Ranch Dressing Mix Freezing Directions: Combine beef, ranch dressing mix and shredded cheddar cheese. Gently shape 6 patties of equal size and thickness. With your thumb, or back of a spoon, make a shallow indentation about 1 inch wide in the center of each patty. This helps that patties to cook evenly. Place a small square of wax or parchment paper between each patty and place in gallon size freezer bag. Freeze up to 3 months. TO SERVE: Thaw desired number of patties. Grill patties over direct high heat with the lid closed as much as possible, until cooked to medium doneness – 8-10 minutes, turning once. Or cook in fry pan on stove top over med- high heat until done. If desired, during the last minute of grilling/frying, place a slice of cheese on each patty to melt. Calzones

Calzones


24 rhodes rolls 1 cup pizza sauce any of your favortie pizza toppings Let rolls thaw & slightly rise.Knead three rolls together and spread in an oval for the bottom of the calzone.Fill the calzone with whatever toppings you like best.Knead three more rolls together and spread in an oval for the top of the calzone. Cover the toppings and seal the top and bottom of the calzone together.Repeat 3 times.

24 labels: Calzones: Thaw. Bake in oven at 350 degrees for 20-25 minutes. Serve with pizza sauce. 2-26-15

Hamburger Tetrazzini

Hamburger Tetrazzini
1 lb. uncooked spaghetti
1/2 lb. sliced fresh mushrooms
1 c chopped onion
1/2 tsp. minced onion
2 tbs. olive oil
3 cans COM soup
1 lb. hamburger
1 can chicken broth
1 tsp. Italian Seasoning
3/4 tsp. pepper
2 c grated parmesan cheese, divided

Label: Cook 1/2 package of Spaghetti according to package directions. In a skillett, add oil and saute the mushrooms, onions, and garlic until tender. Add a can of Cream of Mushroom soup, 1 1 1/4 cup of water and stir in the soup, hamburger, Italian seasoning, and pepper. Drain spaghetti, stir into the hamburger mixture. **Add 1 can cream of mushroom soup **

Transfer into greased 8 in. square baking dishes. Sprinkle with remaining cheese.
Bake casserole covered at 350 for 45 min. Uncover and bake for 5-10 more min. or until bubbly. 2/26/15

Honey Nut Stir-Fry

1 pound chicken breast
3/4 cup orange juice
1/3 cup honey
3 tbsp soy sauce
1 tbsp cornstarch
1/4 tsp ground ginger
2 tablespoons vegetable oil
2 large carrots, sliced diagonally
2 stalks celery, sliced diagonally
1/2 cup cashews or peanuts
Hot cooked rice

Cut chicken into thin strips; set aside.  Combine orange juice, honey, soy sauce, cornstarch and ginger in bowl; mix well.  Heat 1 tbsp oil in large skillet.  Add carrots and celery; stir-fry about 3 minutes.  Remove vegetables; set aside.  Pour remaining 1 tbsp oil into skillet.  Add chicken; stir-fry about 3 minutes.  Return vegetables to skillet; add honey mixture and nuts.  Cook and stir over medium-high heat until sauce comes to a boil and thickens.  Serve over rice.

Label (12):  Heat 1tbsp oil in skillet & stir-fry carrots & celery for 3 minutes; set aside.  Add 1 tbsp oil & cook chicken in skillet.  Return veggies & add honey mixture & nuts.  Cook until sauce boils & thickens.  Serve over rice.

White Chicken Chili

1 Tbsp cornstarch 

2 TBS minced onion 
1 4 oz can chopped green chilis
2 cans white beans (drained) 
2 tsp cumin 
1 tsp chili powder 
1 lb. Boneless chicken 
1 15 oz can chicken broth 
1 tsp salt 
1 tsp pepper 
Place all ingreadients except chicken broth in large freezer bag, toss to coat and freeze. When ready, place ingredients in crock pot, add chicken broth and cook on low for 4-5 hours. Remove chicken, shred and return to crockpot. 
Label(24): Place ingredients in crock pot. Add chicken broth and cook on low for 4-5 hours. Remove chicken, shredd and return to crock pot. Serve with tortilla chips and sour cream. 2/26/15

Cilantro Lime Chicken with Corn and Black Beans

3-4 chicken breasts
2 Tbsp olive oil
1 lime, juiced
1 bunch cilantro
1-16 oz bag of frozen corn
2 minced garlic cloves
1/2 finely chopped onion
1 can black beans, drained and rinsed
1 tsp cumin or chipotle powder
salt and pepper to taste

Place all ingredients into a ziploc bag and freeze.

Labels (24): Place 3-4 chicken breasts and ingredients in crockpot. Cook on low for 8 hours or high for 4 hours. 2/26/15

Melt in your mouth Pot Roast

1 (3- to 4-pound) beef chuck roast
1 (12-ounce) can Cola (not diet)
3⁄4 cup dark brown sugar
3⁄4 cup Heinz chili sauce
3⁄4 cup ketchup
3⁄4 packet dry onion soup mix

Label: (12) Melt in Your Mouth Pot Roast
Combine all ingredients in a slow cooker, including the can of Coke. Cook on low 8 to 10 hours.
*Optional...Add 4 or 5 red potatoes and 2 cups of baby carrots. 3-15

Grilled Kielbasa and Pesto Penne

Grilled Kielbasa and Pesto Penne

Ingredients:
  • 1 lb Penne Pasta
  • 1 lb cooked Kielbasa
  • 1/2 cup Pesto sauce
  • 1 tablespoon dried basil
  • Dash of dried Oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
Directions:
  1. Preheat the grill or griddle on medium heat.
  2. Cook the pasta according to the directions on the box. Be sure to season the boiling water with salt before adding in the pasta.
  3. Keep the Kielbasa whole if using an outdoor grill. Cut the Kielbasa into 1/2 inch slices if you're using a stovetop griddle. Grill the Kielbasa until slightly browned and marked with grill marks. 
  4. Return the drained pasta to the pot. Toss in the Kielbasa (if you keep the Kielbasa whole, be sure to cut it into slices before adding it to the pasta), Pesto sauce, dried basil, dried Oregano, and garlic powder. 
  5. Toss together the ingredients. 
  6. Season with salt and pepper to taste.
  7. Serve warm.

ingredients
  • 1 pork shoulder/butt -3 lbs
  • 1 old el paso sauce packet (roasted garlic
  • 1 cup root beer (a&w)
  • 2 cups light brown sugar
instructions
  1. place the pork in a slow cooker. mix the sauce, rootbeer and brown sugar in a bowl and pour all over the pork. cook on low for 6 hours, remove the meat and shred (it should be quite easy and tender). place the meat back in the sauce and cook on low for an additional 2 hours.
  2. serve immediately.
cilantro-lime rice
   ingredients
  • 2 cups rice
  • 4 cups water
  • 2 tablespoons of unsalted butter
  • 2 teaspoons chicken bouillon
  • 1 handful cilantro, chopped
  • 1/2 lime, juiced
  • 1 can (4oz) diced green chiles
  instructions
  1. pour everything in a rice cooker and follow product instructions, or in a pot, heat to a boil and then add the lid and turn down to low for 20-30 minutes or until tender.
  2. remove the lid, stir to combine everything and serve immediately.

Mix sauce, brown sugar, & 1 cup root beer. Pour on pork in slow cooker.  Cook low for 6 hrs. Shred & cook on low for 2 hrs.  Use for tacos, burritos, salads.
Rice: add contents of bag, green chilies and 4 cups of water to rice cooker (or cook in pot).

1 lb Hamburger
1 large onion
1/2 tsp salt

Brown and add the remaining ingredients and simmer 30 minutes.

1 1/2 Tbsp flour
1 1/2 tsp chili powder
1 1/2 Tbsp catsup
2 Tbsp Worchestershire sauce
1 can tomato soup
2 bay leaves

Label (12) Sloppy Joes  Thaw & brown meat.  Add sauce bag and simmer 30 mins.  Serve on Buns 1/15/15

Sweet, Sticky, & Spicy Chicken

SWEET, STICKY, AND SPICY CHICKEN

Ingredients:

1 tablespoon brown sugar
2 tablespoons honey
1/4 cup soy sauce
2 teaspoons chopped fresh ginger root
(or 1/2 tsp ground ginger)
2 teaspoons chopped garlic
2 tablespoons hot sauce
salt and pepper to taste
4 skinless, boneless chicken breast
halves - cut into 1/2 inch strips
(or 1&1/2-2lbs chicken strips)
1 tablespoon vegetable oil

Directions:

1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
2. Lightly salt and pepper the chicken strips.
3.
Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.   Great served over rice.

Baked Ziti



1 lb dried ziti
1 lb ground beef
1 T dried onion
1 jar Traditional Prego
1 jar Sausage Prego
6 oz. spliced provolone cheese
1 1/2 cups sour cream
8 oz mozzarella cheese
2 T grated parmesan cheese

Cook Ziti al dente. Brown meat with dried onion. Add sauce and simmer for 15 minutes. Layer half of Ziti in sprayed baking dish. Layer provolone cheese on pasta. Spread sour cream over provolone. Spread half of sauce. Add remaining Ziti. Add mozzarella and remaining sauce. Top with parmesan cheese. Bake for 30 minutes at 350.

Labels 12-  Baked Ziti- Thaw.  Bake covered for 30 minutes at 350.  Uncover for last 5 minutes.  1-15-15

Baked Sweet and Sour Chicken

3 to 4 boneless chicken breasts
1 1/2 cups cornstarch
3 eggs, beaten
1/2 cup canola oil
1 cup sugar
4 tbl ketchup
1/4 cup white vinegar
1/4 cup apple cider vinegar
1 tbl soy sauce
1 tsp garlic salt

Baked Sweet & Sour Chicken  Cut chicken in bite-sized pieces.  Cook and season with salt & pepper.  Next dip the chicken in eggs (not in bag, use own) and then in cornstarch.  Cook in hot oil for 3 to 4 minutes (brown sides).  Place chicken in 9x13 greased dish.  Pour sauce bag evenly over chicken.  Bake for one hour at 325 degrees, turning every 15 minutes.  1-15-15

Crock Pot Taco Chili

1 onion, chopped
1-16 oz can black beans
1- 16 oz can kidney beans
1- 8 oz can tomato sauce
10 oz package corn
1 - 14.5 oz cans diced tomatoes with chilies
1 packet taco seasoning
1 tbsp. cumin
1 tbsp. chili powder
24 oz boneless, skinless chicken
1/4 cup cilantro

Combine all ingredients in crockpot.  Cook low 6-8 hours. Half hour before serving shred chicken and return to  crockpot.  Serve with fresh cilantro.

Coconut Chicken Fingers

1 cup sweetened coconut flakes
1 cup panko bread crumbs
1 1/2 tsp garlic powder
3/4 tsp salt
3/4 tsp curry powder
1/4 tsp onion powder
1/8 tsp cayenne pepper
1/2 cup flour
2 eggs
12 chicken tenders

Preheat oven to 450.  Chop coconut so it's the same size as the breadcrumbs.  Combine coconut, bread crumbs and spices in a shallow dish.  Place flour in a separate dish and whisked eggs in another separate dish.  Dredge chicken in flour, dip in the egg and roll in the bread crumb mixture.  Bake 20 minutes or until done and golden brown.

Label (12):  Preheat oven to 450.  Place bread crumb mixture in a shallow dish, flour in a separate shallow dish and 2 whisked eggs (not included) in another separate shallow dish.  Dredge chicken in flour, dip in the egg and roll in the bread crumb mixture.  Bake 20 minutes or until done and golden brown.

Baked Potato Soup

1 30 bag of diced hashbrowns
1 32 oz carton of chicken broth
1 10 oz cream of chicken soup
1 8 oz carton of cream cheese
1 3 oz bacon bits
1 c cheddar cheese

For labels:
Place everything EXCEPT 1/2 of the bacon bits, cream cheese and cheddar cheese into the crock pot. Cook on low for 8 hours. 1 hour before serving, add the cream cheese. Serve with the rest of the bacon bits and cheddar cheese.

Slow Cooker Orange Chicken

1 1/2 lb. boneless chicken breasts, chopped into large bite-sized chunks
1/3 cup flour olive oil
1/2 Tbl. salt
1 teaspoon balsamic vinegar
3 Tbl. ketchup
4 oz. frozen orange juice concentrate (put in mixing bowl first, and let thaw as you add other ingredients)
4 Tbl. brown sugar
1/4 tsp. ginger
1 tsp red pepper flakes

In a bowl, combine and mix the orange juice, brown sugar, vinegar, salt, ketchup, ginger and red pepper flakes. Pour the flour in a small bowl. Cover the chicken breast chunks in flour and shake off the excess.
Cooking Directions: Pour a small amount of olive oil in a skillet and brown the flour-covered chicken. The chicken doesn't need to be fully cooked since it's going in the crock pot. After the chicken is done cooking, pour the pieces into the crock pot. Then cover the chicken with your sauce mixture and give the pot a stir. Cook on low for 5-6 hours or on high for 2-3. Serve over rice and even add veggies if you want a healthier meal.

Crock Pot Italian Chicken

Ingredients 2 lbs of chicken breast, thighs, or combination 1, 12 oz jar of pepper rings 2, .7 ounce envelopes of Italian Salad Dressing and Spice Mix Instructions 1.Put chicken in the bottom of a crock pot. Pour pepper rings with juice over chicken. Sprinkle Italian mix over chicken. Cook on low for 8+ hours or on high for 4+ hours. 2.After chicken has cooked, remove any bones or skin and shred. Keep on low till ready to eat. Add chicken broth or water if chicken seems to be drying out. 3.Serve on buns.
