Fresh raspberry chicken
6 Boneless Skinless Chicken Breasts
1/2 Cup Raspberry Preserves
1/2 Cup Frozen Pineapple Juice Concentrate, Thawed
1/2 Cup Soy Sauce
2 T Rice Wine Vinegar
1/2 tsp Chili Powder
1/2 tsp Curry Powder
1/2 tsp Garlic Powder
1/4 Cup Raspberries, Mashed
1/4 Cup Fresh Raspberries (For Garnish)
Mix all ingredients (except raspberries for garnish and chicken). Put thawed chicken in casserole dish. Pour over mixture and cover with tinfoil for 2 hours (or overnight) to marinate. Bake covered at 350 degrees for 30-40 minutes. Transfer chicken to serving platter and top with juices and fresh raspberries. Can serve over white or wild rice.
Label(24): Fresh Raspberry-Place chicken in baking dish and cover w/ contents in sauce bag. cover with tinfoil. Bake @ 350 for 30-40 minutes. Top with pan juices and garnish with raspberries. Can serve over rice. 4-16-15
